Alberto Monteagudo.<\/h2>\n<p>Rub\u00e9n Arnanz, nacido en 1986, es un chef curtido en Espa\u00f1a y en Europa, en los fogones de un abanico de restaurantes m\u00edticos que desde 2015 tiene, y ha renovado, una estrella Michelin. Esa fecha, con una coma en medio \u2014casi la excelencia en el sistema de calificaci\u00f3n acad\u00e9mica franc\u00e9s\u2014, 19,86, es el local que abri\u00f3 en Madrid, en la Galer\u00eda Canalejas, con el abrigo y el inconveniente de vivir rodeado de otros restaurantes. El resultado, sin embargo, es un parad\u00f3jico remanso de paz, una isla frente al bullicio. Y esa excepci\u00f3n es una cuesti\u00f3n de dise\u00f1o.
